What specific DEMANDS should I place on the Food "quality" of my meals?

I’m researching the specifics of Commercial brand foods, herbs and seasonings vs. any I can grow on my own.
I’m tempting to grow my own garden of herbs, seasonings, vegetables, etc. if the result of these efforts will be "better" than simply driving to Wally-world to buy them from the shelves.
I hear many NEGATIVE ideas about COMMERCIALLY SOLD PRODUCE that I want to grow these veggies in my back yard.
Will my efforts (using the more water from the dwindling water table) be WORTH the nutritional benefit of my home-grown veggies, herbs and seasonings? How / if can I grow these veggies in a CONTAINER if my (yard-full) plans do not mature?

container gardening: plastic crates into planters?

I have inherited about ten 12-x-12 inch plastic storage crates, sturdy and made kind of like milk crates. I like to keep a container garden of herbs & veggies on my screen porch and am trying to figure out the best way to convert them into planters because I can probably double my gardening capacity just by making a row of them along the porch.

I was thinking about what would be the best, cheapest thing to line them with… maybe just get 5 gallon "grow bags" or something and poke some holes in the bottom… but then I live in FL zone 9b so basically our weather is warm & dry for half the year and hot & wet the other half, so I have mixed feelings whenever using plastic; it’s great when it is dry & hot, but it sucks and keeps too much moisture in when we go through a really wet month and it has caused me problems with mold/mildew occasionally.

I have some screening from my porch and was thinking about maybe using that to line them, it’d be great for air flow but maybe a little bit too great and I am afraid the plants might dry out too quickly.

Also was thinking about adding a nylon tube (stocking) full of peat hanging out one of the holes in the bottom and dipping into a big pan of water (with the crate elevated above it of course) so the plant can suck up the moisture it needs and I can just keep the pan full, kind of like a grow box.

Thoughts/experiences for this project appreciated.

Having an organic garden?!?

I want to start my own organic garden, but where should I plant my organic seeds? Probably not in my actual land, since there could be chemicals and pesticides already existing in the soil. Should I just get big planting bins, and plant herbs and lettuces, and maybe some veggies? Or will there not be enough space for a proper root system to form?

Help!! Something's eating up my garden's…?

My garden’s in shambles. I planted flowers, vegetables and herbs. But most of the leaves have been eaten. The flower petals too! It started with a few little holes in the leaves, next thing you know, the only things left are the stems. My local hardware store recommended a liquid a that is mixed with water when attached to the water hose. It says not to use on lettuce and the like. I don’t see much difference after I used it. Also, whatever I use has to be safe for the veggies and herbs. Help!
