Your best bet is to use them, but if you want to store a little of them for later, you can chop them up and put them in water and then freeze that mixture in ice cube trays.
Pop out the cubes and put them in a freezer storage bag.
Then you can put, say, a basil cube in simmering sauce, or a mint cube in some iced tea.
Plant mint in a container. If you plant it the ground it will take over and be very hard to eradicate.
Keep the plants in containers. Plants in the mint family tend to take over gardens. Pick just enough for what you are going to use.
